spiced sumo orange muffins
280g self-raising flour
150g caster sugar
1 teaspoon baking powder
1 teaspoon vanilla extract
1 teaspoon mixed spice
¾ Sumo orange, zest
½ Sumo orange, juice
150g icing sugar
2 tablespoons orange juice
¼ Sumo orange, zest
Preheat oven to 200°C / 180°C Fan / 400°F / Gas Mark 6. Line a 12 hole muffin tin with muffin paper cases.
Cream the butter and sugar together until smooth and light in colour.
Add the flour, baking powder, mixed spice and eggs. Mix until smooth. Add the vanilla extract, orange zest and juice and mix until combined. Spoon the mixture evenly into the cupcake cases.
Bake in the oven for 15-20 minutes until slightly browned on top.
To make the buttercream: mix the butter and icing sugar together until smooth. Add the Sumo orange zest and a little orange juice, then mix again.
Remove the cakes from the oven and leave to cool on a wire rack.
